3 Easy Lunchbox Snacks My 4-Year-Old Loves

🥣 Homemade Muesli Bars
Ingredients
125g unsalted butter, chopped
⅓ cup firmly packed brown sugar
2 tbsp honey
1½ cups rolled oats
½ cup self-raising flour
½ cup dried apricots, finely chopped
¼ cup pepitas (pumpkin seeds)
¼ cup sunflower seeds
Method
- Preheat oven to 160°C.
- Grease and line a baking tray with baking paper.
- In a saucepan over low heat, melt together the butter, brown sugar and honey until combined.
- Stir through the rolled oats, flour, apricots, pepitas, sunflower seeds, dates and coconut.
- Press the mixture firmly into the prepared baking tray.
- Bake for approximately 40 minutes or until golden brown.
- Allow to cool completely before slicing into bars.
💡 Store in an airtight container for up to a week or freeze for future lunchbox prep.
🍓 Raspberry Ricotta Pikelets
Ingredients
- 2 cups self-raising flour
- ¼ cup caster sugar
- 2 eggs
- 1 cup smooth ricotta
- 1¼ cups buttermilk
- 125g fresh raspberries, roughly torn
- Cooking oil spray
Method
- Sift flour and sugar into a large bowl.
- In a separate jug, whisk together eggs, ricotta and buttermilk.
- Gradually whisk the wet ingredients into the flour mixture until smooth.
- Gently fold through the raspberries.
- Heat a frying pan over medium heat and lightly spray with oil.
- Add heaped tablespoons of batter and cook until bubbles appear on the surface.
- Flip and cook for another minute until golden.
- Repeat with remaining batter.
💡 These freeze beautifully and are perfect for busy mornings.
🧀 Cheesy Vegemite Twists
Ingredients
- 2 sheets frozen puff pastry, thawed
- 4 tsp Vegemite
- ⅔ cup finely grated parmesan cheese
Method
- Preheat oven to 220°C and line two baking trays.
- Spread one sheet of pastry with 2 tsp Vegemite and sprinkle with half the parmesan.
- Place the second pastry sheet on top.
- Spread with the remaining Vegemite and sprinkle with the remaining parmesan.
- Cut the pastry stack in half lengthways.
- Stack one half on top of the other and press down gently.
- Cut into strips and twist each strip several times.
- Place on trays and freeze for 30 minutes.
- Bake for 12 minutes or until golden brown.
- Cool on a wire rack before serving.
💡 A lunchbox favourite that can be made ahead and frozen.
