3 Easy Lunchbox Snacks My 4-Year-Old Loves

Thank you for supporting my content! Here are the lunchbox recipes I promised. These are simple, mum-friendly recipes that I make regularly for my family.

🥣 Homemade Muesli Bars

Ingredients

125g unsalted butter, chopped

⅓ cup firmly packed brown sugar

2 tbsp honey

1½ cups rolled oats

½ cup self-raising flour

½ cup dried apricots, finely chopped

¼ cup pepitas (pumpkin seeds)

¼ cup sunflower seeds

Method

    1. Preheat oven to 160°C.

    1. Grease and line a baking tray with baking paper.

    1. In a saucepan over low heat, melt together the butter, brown sugar and honey until combined.

    1. Stir through the rolled oats, flour, apricots, pepitas, sunflower seeds, dates and coconut.

    1. Press the mixture firmly into the prepared baking tray.

    1. Bake for approximately 40 minutes or until golden brown.

    1. Allow to cool completely before slicing into bars.

💡 Store in an airtight container for up to a week or freeze for future lunchbox prep.

🍓 Raspberry Ricotta Pikelets

Ingredients

    • 2 cups self-raising flour

    • ¼ cup caster sugar

    • 2 eggs

    • 1 cup smooth ricotta

    • 1¼ cups buttermilk

    • 125g fresh raspberries, roughly torn

    • Cooking oil spray

Method

    1. Sift flour and sugar into a large bowl.

    1. In a separate jug, whisk together eggs, ricotta and buttermilk.

    1. Gradually whisk the wet ingredients into the flour mixture until smooth.

    1. Gently fold through the raspberries.

    1. Heat a frying pan over medium heat and lightly spray with oil.

    1. Add heaped tablespoons of batter and cook until bubbles appear on the surface.

    1. Flip and cook for another minute until golden.

    1. Repeat with remaining batter.

💡 These freeze beautifully and are perfect for busy mornings.

🧀 Cheesy Vegemite Twists

Ingredients

    • 2 sheets frozen puff pastry, thawed

    • 4 tsp Vegemite

    • ⅔ cup finely grated parmesan cheese

Method

    1. Preheat oven to 220°C and line two baking trays.

    1. Spread one sheet of pastry with 2 tsp Vegemite and sprinkle with half the parmesan.

    1. Place the second pastry sheet on top.

    1. Spread with the remaining Vegemite and sprinkle with the remaining parmesan.

    1. Cut the pastry stack in half lengthways.

    1. Stack one half on top of the other and press down gently.

    1. Cut into strips and twist each strip several times.

    1. Place on trays and freeze for 30 minutes.

    1. Bake for 12 minutes or until golden brown.

    1. Cool on a wire rack before serving.

💡 A lunchbox favourite that can be made ahead and frozen.
